Is there a better comfort food than a pillowy soft, cheesy lasagna? I think not. ChefKev (my husband for any newbies here) has been in the kitchen again and this time he whipped up the most amazing, moth-watering lasagna.
Ooey Gooey Cheesy Lasagna
A delicious, cheesy lasagna. The ultimate comfort food!
Servings 6 people (or more… how hungry are you?)
Equipment
- 9 x 13 casserole dish
Ingredients
- 2 tbsp canola oil
- 1 white onion diced
- 4 garlic cloves peeled and grated
- 1 lb lean ground beef
- 1 lb sweet italian pork sausage meat
- 3-4 tbsp italian seasoning
- 796 ml diced tomato
- 796 ml crushed tomato
- 398 ml tomato sauce
- 2 tbsp balsamic vinegar
- 1 package oven-ready lasagna noodles
- 475 gm ricotta cheese
- 1 egg
- salt and pepper to taste/season
- 200 gm tex mex blend cheese shredded
- 650 gm mozzarella cheese shredded
- parmesan grated
- parsley to finish
Instructions
- Heat a large pot with two tbsp canola oil on medium-high. Once hot, add onion and garlic. Cook until softened.
- Add ground beef, pork sausage and italian seasoning to pot and cook until no pink remains. Season with salt and pepper
- Add diced tomatoes, crushed tomatoes, tomato sauce and balsamic vinegar to pot. Simmer on low for 45 minutes.
- In a bowl, mix together ricotta cheese, egg and pepper.
- As the tomato meat sauce simmering nears completion, preheat your oven to 375°F
- Begin assembling your lasagna in a 9 x 13 casserole dish. First, spread a layer of the tomato meat sauce across the bottom.
- Follow with a layer of noodles and then another layer of tomato meat sauce.
- Top that with a layer of shredded tex mex cheese and then add another layer of noodles.
- Add another layer of tomato meat sauce.
- Layer in all your ricotta and egg mixture.
- Top your ricotta egg mixture with another layer of tomato meat sauce and top with another layer of noodles.
- Finally, add one more layer of tomato meat sauce and top with your mozarella cheese as your top layer.
- Tent with foil and bake at 375°F for approximately 30 minutes. Remove foil and cook for another 20 minutes. To brown the top to your liking, finish under the broiler.
- Grate over fresh parmesan, add some parsley, serve and enjoy!
